A succulent, deeply complex green tea blend with buttery asparagus notes, nutty sweetness and heady floral aromas.
Quantity
Use 0.1 oz of leaf per 5.5 fl oz of water (2g per 150ml).
Temperature
For the optimum experience use water between 158°F (70°C) and 185°F (85°C).
Time
Infuse for 60 to 90 seconds, tasting regularly.
Infusions
You can infuse this tea at least three times. With each careful infusion, different subtleties of flavour are revealed.

Different temperatures will bring out very different flavours to this luscious blend.
We suggest trying the 21st Century Blend at 70°C, 75°C, 80°C & 85°C (158°F, 167°F, 176°F & 185°F) and find the temperature that best expressed the flavours you most enjoy. At lower temperatures it is sweeter and smoother but the higher temperatures bring out the headiest floral aromas and deep vegetal notes. Lower temperatures may require slightly longer steeping times.
Each infusion differs as you infuse the tea. For a really epicurean delight – please try making the first infusion at 70°C and leaving to steep for 90 seconds, then raise the temperature to 75°C for the second infusion, for 60 seconds, then the third infusion at 85°C for 45 seconds.

The teas come from our partner farms mentioned throughout this website. It is a blend created by our Rare Tea Lady Henrietta Lovell from fresh spring harvests from China, Japan and India.
