This is from the Spring 2021 pick, and comes from the "Rumjache" tree.

Tasting Notes

A rich marzipan scent adds to the succulent cherry and vanilla taste, with a light, honeyed sweetness. A delicious infusion to truly savour.

Quantity

Use 0.02oz of blossom per 5.1fl oz of water (0.5g per 150ml).

Temperature

For the optimum infusion use boiling 212°F (100°C) water, although you can experiment with lower water temperatures - try water between 158 - 176°F/70 - 80°C to extract different tastes.

Time

Infuse for 1 - 3 minutes, tasting regularly.

Infusions

You can infuse these flowers at least three times. With each careful infusion, different subtleties of flavour are revealed.
