Thanks to the generosity of the Jun Chiyabari Tea Garden we've managed to secure this year’s harvest of their extremely rare Himalayan Cherry Blossom.

The diaphanous flowers, though delicate, release mountains of flavour.

This pick comes from the "Rumjache" tree; as always, this is a very limited pick and won't be around for long!

Tasting Notes

A rich marzipan scent adds to the succulent cherry and vanilla taste, with a light, honeyed sweetness. A delicious infusion to truly savour.

Quantity

Use 0.1 oz of blossom per 5.5 fl oz of water (0.5g per 150ml).

Temperature

For the optimum infusion use boiling 212°F (100°C) water, although you can experiment with lower water temperatures - try water between 158 - 176°F/70 - 80°C to extract different tastes.

Time

Infuse for 1 - 3 minutes, tasting regularly.

Infusions

You can infuse these flowers at least three times. With each careful infusion, different subtleties of flavour are revealed.
