This herbal infusion has a soft lemon base with subtle green anise notes.
The Sweet Cicely is harvested by hand in the forests of Denmark, North of Copenhagen by the wonderful wild forager Zenia (@zeniasamlersen). This extraordinary woman, and kindest of humans, hunts down many of the wild herbs for restaurants in Copenhagen including Noma.
She carefully collects bundles of fresh herbs and then hangs them around her forest home to dry. It takes great swags of fragrant fresh herbs to produce a few precious kilos. For ten kilos of fresh herb she gets only one kilo of dried leaves.
Her Sweet Cicely is then carefully blended with gorgeous Lemon Verbena from small holder farmers, mostly women with less than ½ a hectare or small garden patches, around the Satemwa community in Thyolo, Malawi.
Their fresh herbs are carefully dried in withering beds usually used to reduce the moisture in fresh tea-leaves before rolling and roasting. It is a wonderful collaboration between tea farm and small holders that brings us some of the best herbs we have ever tried, and vital income to the women who nurture their families communities.
The result is a truly excellent tisane; smooth and elegant with both sweet and savory notes and a gentle complexity that makes it a wonderful pairing – especially for fish, salads and spicy food.
