Tasting Notes
Clean and subtle, these flowers are also wonderfully calming and, of course, caffeine free.
The general rule of thumb is that all herbs should be infused at 100°C, to dissolve the essential oils. After long experimentation looking for the best flavour extraction, we found that chamomile (like tea), contains bitter compounds. The best flavours are released at lower temperatures – treat it like a green tea, 70°C. This brings out all the sweetness and leaves the bitterness behind. It is the only exception to the herbal rule.
