Use 0.1 oz of leaf per 5.5 fl oz of water (2g per 150ml).
Temperature
For the optimum infusion use 176°F (80°C) water.
Time
Infuse for 1 - 2 minutes, tasting regularly.

Nepal
Jun Chiyabari
High in the Nepali Himalayas lies the tiny but extraordinarily beautiful Jun Chiyabari Tea Garden. At 1835 meters above sea level, the tea grows slowly but with intense flavours.
The garden is run by Morris Orchard, a third generation Nepali tea planter, whose great-grandfather came from Britain to plant tea. This lovely man has a great respect for the land, the tea and the small team he works with - it is an honour to be part of that.
